These delicious pumpkin pancakes contain a dose of plant-based protein and are perfect for adding to your healthy diet this holiday season!
1/2 cup + 1 Tbsp flour
1/4 cup quick oats
1 scoop protein powder
1/2 tsp pumpkin spice
1/2 cup pumpkin puree
1 tbsp baking powder
1 tbsp apple cider vinegar
1/4 cup plant milk
Directions 1. Combine all ingredients into a blender and blend until smooth
2. Heat small skillet over medium heat and pour 1/4 cup pancake batter in, cooking for 1-2 minutes or until bubbles start to pop
3. Flip and cook an additional minute, then top as desired!
