Red, White, and Blue Granola Bars

Ingredients:

1/2 cup pecans

1/4 cup macadamia nuts

1 cup old fashioned oats

1/4 cup coconut oil

2 tbsp cashew butter

2 tsp vanilla extract

1/2 tsp lion’s mane powder

½ cup dried cranberries

½ cup dried blueberries

¼ cup coconut chips

½ tsp ground cinnamon

2 scoops unflavored protein powder

¼ cup ground flaxseed


Directions:

1. In a food processor, combine nuts, oats, flaxseed and coconut chips and pulse until a medium crumble consistency and transfer to a bowl

2. Add in dried berries and mix until well distributed

3. Combine melted coconut oil, cashew butter, protein, cinnamon, vanilla, and lion’s mane in a blender and blend on low until fully mixed and well blended

4. Pour mixture over crumble, stirring until fully coated

5. Transfer to a parchment lined 8x8 square pan and press firmly into the bottom

6. Put in freezer for at least an hour, then remove and cut into 16 even bars
