Everything Breakfast Cookies

These cookies are nutrient dense for on-the-go and are packed with fiber, omega-3's, healthy fats, protein, and numerous vitamins and minerals (calcium, magnesium, manganese, B-vitamins, zinc, selenium, etc).


Ingredients:

1 1/4 cup quick oats

1 1/4 cup white whole wheat flour

1 tbsp chia seeds

2 tbsp flaxseed

1/2 cup packed brown sugar

1 tbsp cashew butter

2 tbsp maple syrup

1/4 cup Silk Almond & Cashew Protein milk

2 tsp pure vanilla extract

1/4 tsp cinnamon

1/2 tsp baking soda

1/3 cup chopped pecans

1 egg + 2 egg whites

1/4 cup melted coconut oil

1/3 cup mini chocolate chips OR chopped chocolate bar


Directions:

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper

  2. Combine all wet ingredient, except eggs and egg whites, in a stand mixer until well combined

  3. In a separate bowl mix all dry ingredients and whisk until evenly distributed so you don't have pockets of baking soda in your cookies

  4. Add in the egg and egg whites to the wet mixture and mix until just combined (don't overmix)

  5. Add the flour mixture into the wet and mix until you can't see anymore flour

  6. Fold in the chopped pecans and chocolate

  7. Using a standard cookie scoop, scoop dough onto parchment paper and lightly flatten with your hand, spatula, or back of a spoon

  8. Bake for 10-12 minutes; I pull my cookies at 10 because I like them slightly underdone. Makes 25 cookies.
