Chocolatey Chip Banana Bread

This chocolate banana bread is where my love of banana bread meets my craving for chocolate! Toss in those mini chocolate chips (because why not?!) and you have yourself a delicious slice of chocolatey heaven!


Recipe:

2 pasture raised eggs

3/4 cup plain greek yogurt

1/2 cup pure maple syrup

2 tsp pure vanilla extract

1/2 cup coconut oil, melted

3 medium very-ripe bananas

1 2/3 cups white whole wheat flour

1/3 cup cocoa powder

1/3 cup chocolate protein powder (I use KOS)

1 1/2 tsp baking soda

1 tsp baking powder

1/2 cup mini chocolate chips (+ more to sprinkle on top!)



Directions:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Combine all wet ingredients, except eggs, together in a stand mixer until nice and creamy. Then add in eggs and mix until just combined.

  3. In a separate bowl, combine all dry ingredients and whisk for about 30 seconds to ensure leavening agents are well dispersed. Then add in mini chocolate chips and evenly coat*

  4. Add dry ingredients into the wet and mix until well combined.

  5. Transfer to a lightly greased 9x13 loaf pan and bake for 50 minutes or until a knife comes out MOSTLY clean. If it's completely clean, your loaf will be a little dry.

  6. Allow to cool for about 15-20 minutes and enjoy!


*Adding chocolate chips into flour mixture to evenly coat them, prevents them from sinking to the bottom while baking
